Although most people tend to eat oysters in their juice, raw, and served with a little cayenne pepper and a wedge of lemon, this method does not appeal to everyone.

Thankfully, there are a number of popular dishes where oysters are prepared by grilling, steaming, baking or pan-frying, and so luckily those that prefer their shellfish cooked and not raw, need not miss out on the delights of this tasty mollusc.

In the majority of cooked oyster recipes, the juice of the oyster is always used, which adds a lot of flavour, so be careful not to discard this liquid when removing the oyster from its shell.
