Tuna steaks are perfect for
grilling, being cooked on the barbeque, or pan-searing, and this fish works extremely well with Asian flavours such as sesame, garlic, soy,
ginger and teriyaki.
Tuna is often pan-seared, which involves only a few minutes cooking, and it can also be eaten raw. When grilling this fish, for the best results and fullest flavours, grill the steaks for a few minutes on each side but leave the centre slightly underdone.
If you overcook tuna it will dry out and lose its flavour.
Often tuna steaks are marinated but this recipe consists of grilling the steaks with a simple seasoning of salt and pepper and serving them with a tangy oriental dressing that could also be used as a marinade.
This dressing made from zingy ingredients such as spring onions,
chives, soy sauce, sherry and ginger complement the fish extremely well. Serve this dish as a main meal or light lunch with a freshly tossed salad of
green leaves with a light vinaigrette dressing or with grilled asparagus.
